Crisp Cucumbers and Zesty Dressing: A Refreshing Dish with a Crunch

Asian Cucumber Salad
During a summer picnic last year, I was tasked with bringing a fresh, vibrant dish. Drawing inspiration from my love for Asian flavors, I created this Crunchy Asian Cucumber Salad. It’s a dish that marries the crispness of cucumbers with a tangy and spicy dressing, topped with toasted sesame seeds and roasted peanuts for extra texture. Now, whenever I prepare this salad, it brings back fond memories of that picnic, echoing the simplicity and freshness of the dish.
Ingredients -
- 6 firm medium cucumbers
- 1 clove of garlic, minced
- 1 teaspoon of ginger, minced
- 3 scallions, finely sliced
- 2 tablespoons of rice vinegar
- 2 tablespoons of liquid amino acids (or soy sauce)
- 1 tablespoon of sesame oil
- 1 tablespoon of fish sauce
- 1 tablespoon of honey
- 1-2 teaspoons of sriracha (adjust to taste)
- 2 tablespoons of toasted sesame seeds, divided
- 2 tablespoons of crushed peanuts (preferably roasted)
- 1/4 cup of cilantro, finely chopped
Instructions -
1. Slice the cucumbers in half, then cut into thin diagonal slices.
2. In a mixing bowl, combine all other ingredients except for half of the peanuts and sesame seeds.
3. Mix well and adjust flavors to your liking.
4. Garnish with the remaining peanuts and sesame seeds.
