Ingredients -
1.5 cups peanut, avocado, or vegetable oil
2 chili peppers, roughly chopped
2 shallots, thinly sliced
10 cloves garlic, roughly chopped
1 teaspoon crushed black peppercorns
¼ cup red chili flakes
1 tablespoon smoked paprika
1 tablespoon soy sauce
1 teaspoon sugar
½ teaspoon fine sea salt
1 cinnamon stick
4 star anise pods
Instructions -
Heat Ingredients: In a medium pot, combine oil with chili peppers, shallots, garlic, black peppercorns, cinnamon stick, and star anise. Heat over medium-low for 25-35 minutes until ingredients are browned to your preference.
Prepare Spice Mix: While the oil heats, mix chili flakes, paprika, soy sauce, salt, and sugar in a heat-proof bowl. Set aside.
Strain and Heat Oil: Strain the oil into a saucepan, preserving the crispy bits. Remove cinnamon and star anise from bits. Reheat the oil until it is hot enough to form bubbles around a chopstick.
Combine: Carefully pour the hot oil back into the heat-proof bowl over the spice mix, stirring to combine. Mix in the crispy bits.
Store: Transfer to an airtight container and refrigerate for up to a month.
This chili crisp is your go-to for adding a spicy, crunchy kick to any meal. Store it in your fridge and use it to elevate your dishes with a robust flavor that's unmistakably rich and fiery.
