Mango Sago
Mango Sago is a delightful vegan and gluten-free dessert that brings together the creamy richness of coconut, the chewy texture of tapioca pearls, and the sweet, juicy taste of fresh mango. Perfect for those looking for a refreshing, tropical treat, this dessert layers mango purée, coconut-infused sago, and fresh mango cubes to create a light and satisfying finish to any meal. Ingredients -
1/2 cup tapioca pearls
8.5 oz coconut cream (250 ml)
2 tablespoons honey (or maple syrup for vegan option)
1/2 teaspoon vanilla extract
2 medium mangos
Coconut flakes for garnish (optional)
Instructions -
Boil Tapioca Pearls: Bring at least 7 cups of water to a boil in a pot. Once boiling, add the tapioca pearls, reduce heat to low, and cook for 20-30 minutes until the pearls are translucent. Stir frequently to prevent them from sticking.
Prepare Coconut Cream: While the tapioca is cooking, combine the coconut cream, honey, and vanilla extract in a small pot. Cook over medium heat, stirring until the honey dissolves into the mixture. Set aside to cool.
Prepare Mangos: Puree the flesh of one mango using a food processor. Cut the other mango into cubes and slice a few thin strips or slices for garnish.
Cool Tapioca: Once the tapioca is ready, strain and rinse them under cold water. Transfer them into an airtight container, add the coconut cream mixture, and mix well. Let the mixture cool in the refrigerator for at least 2-3 hours.
Assemble the Sago: When ready to serve, grab a glass and layer 3-4 spoonfuls of tapioca, followed by mango purée, and then cubed mango. Repeat the layers until the glass is full. Garnish with mango slices and coconut flakes if desired. Serve cold and enjoy!
