Potato Mochi with Sweet Soy Glaze
Indulge in the delightful taste of Potato Mochi, an inventive take on traditional mochi that combines the comforting texture of mashed potatoes with melted mozzarella. Topped with a sweet and savory soy glaze and a delicate piece of nori, these mochi are a testament to creative cooking.
Ingredients -
For Potato Mochi:
2 medium-large potatoes (preferably Russet)
4 tablespoons cornstarch
1 tablespoon softened butter
Grated mozzarella cheese
A small piece of nori for garnish
For Potato Mochi:
2 tablespoons soy sauce
2 tablespoons mirin
2 tablespoons brown sugar
1/2 tablespoon butter
Instructions -
1. Wash, peel, and cube the potatoes. Boil in salted water until fork-tender.
2. Drain the potatoes and mash them in a mixing bowl. Add cornstarch and butter, mixing until fully incorporated into a pliable dough that isn’t too sticky. Add more cornstarch if necessary.
3. Take two equal pieces of dough and shape them into circular discs. Place some mozzarella cheese in the center of one disc and cover it with the other, sealing the edges. Shape as desired and repeat with the remaining dough.
4. Heat oil in a pan over medium heat and fry each mochi until golden and tender.
5. In a saucepan, combine all the glaze ingredients and cook until the sauce thickens. Reduce heat, add the mochi, and gently coat them with the glaze.
6. Allow the mochi to cool slightly, then garnish with a piece of nori cut into small decorative shapes.
