Spicy Tuna Yaki Onigiri

Spicy Tuna Yaki Onigiri is a fantastic Japanese treat that offers a unique twist with its crispy exterior and spicy filling. Inspired by traditional onigiri, these savory rice balls are pan-fried to golden perfection, giving them a satisfying crunch and a burst of flavor. The combination of spicy tuna, a savory soy glaze, and crispy edges makes this dish a perfect snack or light meal. With a hint of nori for garnish, these onigiri are not only delicious but also visually appealing. Whether enjoyed hot or cold, they pack a serious heat that will leave your taste buds craving more!


Ingredients -

  • 6 cups cooked sushi rice (or short-grain Japanese rice)

  • 1 can tuna

  • 2 tablespoons mayonnaise

  • 1 tablespoon sriracha

  • ¼ cup soy sauce

  • 1 tablespoon granulated sugar

  • Oil for frying

  • Nori sheets for garnish


Instructions -

  1. Prepare the Tuna Mixture: In a bowl, mix tuna, mayonnaise, and sriracha. Set aside.

  2. Make the Soy Sauce Mixture: In a small bowl, mix soy sauce and sugar until the sugar dissolves completely.

  3. Shape the Onigiri: Prepare a bowl of cold water. Wet your hands to prevent the rice from sticking. Grab a handful of rice (about 70 grams) and shape it into a ball. Flatten the ball and make an indentation in the middle using your thumb. Add a heaping teaspoon of the spicy tuna mixture into the indentation. Raise the edges of the rice, do so while pushing the tuna filling inside, and cover it completely. Compact and shape the onigiri to your desired form.

    Alternate Methods:

    • Method A: After adding the tuna, place another piece of flattened rice on top of the tuna and press to seal.

    • Method B: Place cling wrap inside a bowl, add a flattened piece of rice with an indentation, and place the tuna in the center. Use the wrap to close the sides and shape the onigiri.

    • Method C: Use a mold if available.

  4. Fry the Onigiri: Heat a large pan over medium heat with a little oil. Place the onigiri in the pan, leaving space between them. Flip when one side is golden brown. Avoid unnecessary moving/flipping of he onigiri as they break easily.

  5. Caramelize the Onigiri: Lower the heat and brush the soy sauce mixture on one or both sides of the onigiri. Flip carefully and caramelize for 15-30 seconds.

  6. Garnish and Serve: Remove from the pan. Garnish with small pieces of nori and enjoy hot or cold!
