Ingredients

  • 3 medium lemons

  • 1-2 additional lemons for juicing

  • 1/4 cup olive oil

  • 2 teaspoons hot paprika, divided

  • 1/2 cup Kosher salt

  • 1/4 cup high-quality extra virgin olive oil

  • Optional: 2 bay leaves


Instructions -

  1. Sterilize the Jar:

  • Sterilize your jar and lid by pouring boiling water over them. Dry thoroughly on a clean towel.

  1. Prepare Salt and Paprika Mixture:

  • On a dipping plate, mix the kosher salt and 1 teaspoon of hot paprika.

  1. Mix Olive Oil and Paprika:

  • In a small mixing bowl, combine the remaining teaspoon of paprika with the 1/4 cup of extra virgin olive oil. Set aside.

  1. Prepare Lemons:

  • Slice the lemons into thin slices, removing any pits.

  1. Salt the Lemons:

  • Dip each lemon slice in the salt-paprika mixture, pressing gently to ensure the mixture sticks. Transfer the slices into the mason jar, stacking them tightly. Press down firmly on the lemons in the jar to pack them densely.

  1. Add Liquids:

  • Once the jar is packed, pour the paprika-olive oil mixture and fresh lemon juice over the lemons. If using, add the bay leaves.

  1. Seal and Store:

  • Place a piece of parchment paper over the lemons before sealing the jar tightly. Gently shake the jar to distribute the juices and spices.

  • Store the jar in a cool, dry place for 2-3 weeks, shaking it once every day or every other day to help the flavors meld.

  1. Ready to Use:

  • After 2-3 weeks, your Tunisian Preserved Lemons are ready to use. They can enhance a variety of dishes with their unique flavor.
